Lemon Baked Pudding

wonderful summer dessert served with mixed berries....

Required Ingredients

1 ½Cupsugar
½Cupall purpose flour
½Teaspoonbaking powder
¼Teaspoonsalt
egg yolks beaten lightly
Teaspoongrated lemon rind
¼Cuplemon juice *
Tablespoonmelted butter or veg oil
1 ½Cupmilk
beaten egg whites
* for more tart, use more lemon juice and equal amt less milk

Preparation Instructions

  1. sift first 4 ingredients together
  2. add everything but egg whites, reserving some sugar to beat with the egg whites
  3. beat egg whites with some of the sugar and fold into above mixture
  4. grease a 2 qt baking dish and add mixture
  5. set in a pan of hot water and bake at 350 deg for 45 min
